Carolin and Nikolaus Bantlin loved to spend holidays around Fitou and always thought to move from Germany to south of France permanently. After a busy life working and living in a big city, Nikolaus and Carolin, decided in 2001 to start a new life in the picturesque sea village of Fitou. They finally found the perfect living place after the birth of their second son, with 7,5 ha of vines 5km from the shores of Med and 150m above sea level.  Carolin studied winemaking in France, at the same time she and Nikolaus began revitalizing their vineyards by applying biodynamic methods and integrating the vines into a natural organic cycle. In their vineyards they forbid the use of pesticides or herbicides. Instead, they apply self-made preparations of nettle, chamomile and horsetail. Their vines are cultivated in the traditional "goblet" style, on a terroir of clay and limestone. Grapes are harvested by hand into small crates and wines are aged in cement or barrel, depending on the cuvée. 

Definitely, their wines (both reds and whites) are full of finesse and elegance, never over-extracted, and the end result cannot be compared with any other from the region. Once you drink a “Bouche Bee”, you can recognise it with blind eyes.
